In a pot, heat 2-3 tablespoons of oil, add a chopped onion, and sauté until it turns golden brown. Then, add 2-3 cloves of minced garlic and a similar amount of ginger paste, along with 1-2 chopped tomatoes. Stir in 1 teaspoon each of cumin, coriander, and red chili powder, and cook for a few minutes.
Now, add the soaked lentils, 4-5 cups of water, and salt to taste. Let it simmer until the lentils are soft and the mixture thickens. For a final touch, temper the daal with fried whole red chilies and cumin seeds in hot oil. Ingredients Shai Daal Mash:
- 1 cup of white urad dal (black gram lentils)
- 1/2 cup of chana dal (split chickpeas)
- 1 small onion, finely chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chilies, chopped
- 1 teaspoon of cumin seeds
- 1/2 teaspoon of turmeric powder
- 1/2 tsp of red chili powder
- Salt to taste
- 2-3 tablespoons of ghee (clarified butter)
- Fresh coriander leaves for garnish
- Lemon wedges for serving
Instructions Of Daal Mash:
1. Wash and soak the urad dal and chana dal in water for about 4-5 hours or overnight.
2. Drain the soaked lentils and add them to a large pot. Add water and a pinch of salt, and cook them until they are soft and mushy. This can take about 30-40 minutes. You may need to add more water as it cooks.
3. In a separate pan, heat ghee. Add cumin and let it cook for few minutes.
4. Add chopped onions, green chilies, minced garlic, and grated ginger to the pan. Saute till the onions become soft.
5. Add turmeric powder, red chili powder, and a little salt to the pan. Sauté the spices for a minute or two.
6. Once the lentils are cooked, add the spiced ghee mixture to the lentils. Mix well and let it simmer for another 10-15 minutes, allowing the flavors to blend.
7. Adjust the salt and spice level according to your taste.
8. Garnish with fresh coriander leaves and sprinkle with lemon juice. And serve hot.
