To make rice kheer, begin by simmering rice in a generous quantity of milk. As the rice softens and the mixture thickens, add sugar to sweeten the pudding to your liking. Traditional recipes often incorporate aromatic cardamom and saffron for an irresistible fragrance and flavor.

- 1/2 cup basmati rice
- 4 cups milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- 2 tbsp diced nuts( almonds, cashews, pistachios) 
- 1 tablespoon raisins
- 1 tablespoon ghee (clarified butter)

Instructions Of Rice Kheer:

1. Wash the rice and soak it in water for 30 twinkles. also, drain the water. 

2. Heat ghee in a heavy-bottomed pan and add the drained rice. Sauté the rice for a couple of minutes until it turns light golden.

3. Add 4 mugs of milk to the visage and bring it to a pustule. Stir sometimes to help the milk from sticking to the bottom. 

4. Once the milk starts to boil, reduce the heat to low and let the rice cook in the milk. Stir occasionally to avoid lumps.

5. After about 30-40 minutes, the rice should be cooked, and the kheer will thicken. Add sugar, cardamom powder, saffron strands (if using), and continue to cook for another 5-10 minutes.

6. Add chopped nuts and raisins, and cook for a few more minutes until the kheer reaches your desired consistency.

7. Remove from heat, and let it cool. The kheer will cake further as it cools.

8. Serve warm or chilled, garnished with more nuts if desired. Enjoy your delicious rice kheer!


Feel free to adjust the sugar to your taste, and you can also add rose water or kewra water for extra flavor if you like.
