Ingredients:

- 1 cup Basmati rice
- 1/2 cup sugar
- 1/4 cup ghee (clarified butter)
- 1/4 cup mixed dry fruits (almonds, cashews, raisins)
- 4-5 green cardamom pods
- 1/2 teaspoon saffron strands (soaked in hot milk)
- 1/4 teaspoon orange food color (optional)
- 2 cups water

Instructions:

1. Wash the basmati rice in water until the soil is clear from the water. Soak the rice in water for about 35 minutes.
 2. In a pot or pan, bring 2 cups of water to a boil. Add the soaked and dry rice to the boiling water and let it cook.Cook until the rice is 70-80% cooked. Drain any excess water.
3. In a separate pan, heat ghee and add green cardamom pods. Sauté for a minute until aromatic.
4. Add the partially cooked rice to the pan. Mix well with the ghee and cardamom.
5. Add sugar and mix until it dissolves. Allow the rice to cook on low heat until it's fully cooked and the sugar has caramelized slightly.
6. Add saffron-soaked milk, mixed dry fruits, and food color (if using). Mix gently.
7. Cover the pan with a lid and let it cook on low heat for an additional 5-7 minutes.
